Mango, Pineapple & Coconut Milk Cooler

This chilly drink is the perfect way to cool down on a hot summer day.



Mango, pineapple cubes & juice, coconut milk and ice come together to make a creamy, icy, sweet and tart drink that makes a perfect refresher on a warm day. Drink as is, or add a few tablespoons of sweetened condensed milk to add a little more creamy sweetness if your fruit isn't as ripe or sweet. You could also add a splash of rum if that's the mood you're in.



When it comes to blending ice, some blenders fair better than others. As pictured above, we had great success with the Cuisinart Hurricane Blender, which blended all of that ice into a smooth and creamy mixture pretty quickly. Our fruit was fresh, however I bet it would have fantastic blending results with frozen fruit as well (which can also be challenge - lookin' at you frozen strawberries).



We all know the garnish adds that "je ne sais quoi" factor that elevates your plain-old juice glass full of smoothie into some tropical escape with warm sea mist blowing in your face. If you can believe it, a wedge of fruit on the side of your cup can do that. We also cut a few of the prettier leaves off our pineapple, wiped 'em down and used those to add a pop of color too. Feel free to get fancy with some maraschino cherries, a grilled piece of pineapple or even a cocktail umbrella if you've got one.




Mango, Pineapple and Coconut Milk Cooler

Yield: 4 Servings


INGREDIENTS

1 Mango, peeled, pit removed and cubed

½ Pineapple, peeled, cored and cubed (use the other half for garnish or a fruit salad)

1 ½ cups Pineapple Juice

1 can Coconut Cream

2-4 tablespoons Sweetened Condensed Milk, to taste, if desired

2 cups Ice



DIRECTIONS

1. Place all ingredients in blender and blend until smooth. Sweeten with a few tablespoons of sweetened condensed milk if desired. Serve.
