A crispy cracker-like breadstick that is easy to adapt with different toppings.
Crisp and golden, these quick crackers are fun to make and eat. We topped ours with sesame seeds, but these would be delicious sprinkled with flaky sea salt, chopped herbs like rosemary or thyme, finely shredded parmesan or your favorite spice blend. Enjoy with soups, salads or just on their own as a snack.
Crispy Sesame Grissini

INGREDIENTS
2 1/2 cups Bread Flour
1 1/2 teaspoons Baking Powder
1 teaspoon Salt
1 tablespoon Butter, softened
1/2 cup Heavy Cream (plus more as needed)
Egg Wash (1 Egg + 1 tablespoon cream)
Sesame Seeds
Other Topping Ideas:
Poppy Seeds
Coarse Ground Black Pepper
Chopped Herbs like Rosemary or Thyme
Parmesan, finely grated
Flaky Salt (reduce salt in recipe to 1/2 teaspoon)
Freeze Dried Garlic
Freeze Dried Onion
DIRECTIONS
1. Preheat oven 350F. Line a baking sheet with parchment paper or silpat mat.
2. In a large bowl, mix together bread flour, baking powder and salt. Using your fingers, disperse butter until the mixture looks like coarse meal. Stir in the heavy cream; mix until a soft dough forms. Wrap and refrigerate for 15 minutes.
3. Roll dough out on a lightly floured surface to a rectangle about 8"x20" long. Brush lightly with egg wash (too much egg wash and the dough will become soggy). Cut crosswise into 1/2" strips, making about 40 strips. Sprinkle with sesame seeds (press in slightly to help them stick) and gently twist each piece into a tight spiral. Place onto prepared baking sheet and bake 10 minutes, then flip and return to the oven for another 5-10 minutes, or until deep golden brown. Cool on a wire rack.
