A DIY cake that can be any flavor you choose. We went for a St. Paddy's theme with green mint and chocolate coins.

This easy DIY ice cream cake comes together in about 10 minutes and includes two of our FAVORITE ingredients: ice cream and Oreos. While you could literally choose any flavor combo you like - we went for a St. Patty's theme with mint chocolate chip ice cream layered with mint Oreos. Give this quick recipe a shot the next time you need a quick cake for birthdays or holidays.
2 Ingredient Ice Cream Cake
Servings: 8 | Prep Time: 10 minutes | Freeze Time: 4-6 Hours
Ingredients
1 quart Ice Cream of choice, we chose mint chocolate chip
1 package Oreos or other sandwich cookie of choice, we chose mint Oreos
Optional Garnishes:
Whipped Cream
Chocolate Coins or other candy
1. Prepare the pan: Line an 8-inch spring form pan with plastic wrap, set aside. Remove about 5 Oreos from the package, crush to form large crumbs and set aside for garnish at the end.
1. Make the cake: Slightly soften ice cream by either setting out on the counter for about 10 minutes, or scooping out into a bowl and microwaving for 1-2 minutes. Stir with a large spoon until pliable but not melted.
2. Spread 1/2 of the ice cream into the bottom of the lined springform pan. Add one single layer of Oreos to cover the surface and then add the second half of the ice cream. Add another single layer of Oreos. Cover entirely with plastic wrap and freeze until firm, about 4-6 hours.
3. Garnish the cake: remove cake from the springform pan and plastic wrap. Flip upside down onto a platter and garnish with whipped cream, chocolate coins and crushed Oreos from step 1. Serve immediately.
