Ingredients:
10 small artichokes (Jerusalem) - or 6 large
1 lemon - halved
2 pound fava beans (fresh) - shelled
3 tablespoon(s) olive oil
6 garlic whistles - cut into 1 inch pieces
1 tablespoon(s) summer savory - chopped fine
1 pinch salt and pepper - to taste
1 pinch red chile flakes (ground) - to taste
Steps:
-Clean the artichokes down to the heart according to the pictorials. (Learn How)
-Follow the steps to slice the heart and keep the slices in the lemon water.. (Learn How)
-Remove the favas from the pod if still intact.
-Bring 1/2 gallon of water to a boil to blanch the favas.
-When the favas are removed from the pod they still have and outer shell around them.
-Blanch the beans for 30 seconds and place in ice water.
-The outer shells can be peeled off of the bean easier. Peel all of the beans and set aside.
-Trim and slice the garlic whistles.
-Heat a large saute pan to medium high. Remove the artichoke slices from the water and dry on a towel.
-Add the oil to the saute pan and carefully place the artichokes in the pan.
-Saute the chokes, stirring to cook evenly, for three minutes or until tender.
-Add the garlic whistles and summer savory and saute another minute.
-Once the garlic has softened up, add the fava beans and season to taste.
-Cook just long enough to warm the fava beans and serve.
