Try smoked tomatoes in place of canned for sauces and braises. They are great added to aioli for sandwiches also.
Ingredients:
8 roma tomatoes - (green or other underripe varieties)
Steps:
-Place the tomatoes in a smoker for half an hour.
-On the grill- Light the coals or burner on one half of the grill. Once the coals are white they are ready for the wood chips.
-Place a foil packet of wood chips over a gas burner set to low. Place the wood chips directly on the coals for a charcoal grill.
-Place the tomatoes on the other half of the grill and close the lid.
-Leave the tomatoes for thirty minutes without opening the lid to let the smoke out. Turn the tomatoes once, halfway through the smoke time.
-Let the tomatoes cool to the touch and then peel the skin off where they are cracked.
-Use as directed in the recipes.
