Steps: |
| -Place the tomatoes in a smoker for half an hour. |
| -On the grill- Light the coals or burner on one half of the grill. Once the coals are white they are ready for the wood chips. |
| -Place a foil packet of wood chips over a gas burner set to low. Place the wood chips directly on the coals for a charcoal grill. |
| -Place the tomatoes on the other half of the grill and close the lid. |
| -Leave the tomatoes for thirty minutes without opening the lid to let the smoke out. Turn the tomatoes once, halfway through the smoke time. |
| -Let the tomatoes cool to the touch and then peel the skin off where they are cracked. |
| -Use as directed in the recipes. |
