This is a traditional garnish for osso bucco that works well on all rich dishes to brighten up the flavors.
Ingredients:
4 garlic cloves - blanched and minced
1 teaspoon(s) lemon zest - zested on a microplane
1/2 cup(s) parsley (flat leaf) - chopped fine
Steps:
-Bring 2 cups of water to a boil in a small saucepan and blanch the garlic cloves for three minutes.
-Once the garlic has cooled, mince with a little kosher salt. (Learn How)
-Zest the lemon with a microplane and then mince it fine.
-Wash the parsley leaves, dry and chop fine.
-Combine all ingredients and refrigerate with a damp towel on top until used.
