Steps: |
| -Dice the butter and place it in a small, heavy bottom saucepan. (Learn How) |
| -Turn the heat to medium and melt the butter. |
| -When the butter is melted, foam will start to come to the surface. |
| -Ladle off as much of the foam as possible. |
| -Occasionally stir the butter to keep the milk solids from sticking to the bottom. |
| -As the solids rise to the top, keep skimming them off. |
| -Keep skimming until the butter is clear. |
| -Strain the butter through a chinoise or mesh strainer to catch any remaining solids. |
