Steps: |
| -Preheat the oven to 350 degrees. |
| -With and electric mixer, cream the butter and sugar together until fluffy; stir in egg yolk and vanilla. |
| -Add the flour and a pinch of salt (about 1/8 of a tsp.) and mix. |
| -Pat the dough into a disk, wrap in plastic wrap and chill for two hours. |
| -Whisk the egg white until frothy. Roll the dough into 1 inch balls and dip the ball into the egg white. |
| -Roll in the nuts to coat and place on a parchment lined cookie sheet. |
| -Make an indentation into the cookie with your thumb and fill with the jam. |
| -Bake for 10-12 minutes, or until the cookies are firm and the nuts are toasted. |
| -Remove and place on a wire rack to cool. |
