These are great cookies to make with the kids!
Ingredients:
1/4 cup(s) sugar (brown)
1/2 cup(s) butter (unsalted)
1 egg yolk
1/2 teaspoon(s) pure vanilla extract
1 cup(s) flour (all-purpose)
1 pinch salt (iodized)
1 egg white
1 cup(s) almonds (blanched) - finely chopped
1 cup(s) nuts
1/2 cup(s) jam (raspberry)
Steps:
-Preheat the oven to 350 degrees.
-With and electric mixer, cream the butter and sugar together until fluffy; stir in egg yolk and vanilla.
-Add the flour and a pinch of salt (about 1/8 of a tsp.) and mix.
-Pat the dough into a disk, wrap in plastic wrap and chill for two hours.
-Whisk the egg white until frothy. Roll the dough into 1 inch balls and dip the ball into the egg white.
-Roll in the nuts to coat and place on a parchment lined cookie sheet.
-Make an indentation into the cookie with your thumb and fill with the jam.
-Bake for 10-12 minutes, or until the cookies are firm and the nuts are toasted.
-Remove and place on a wire rack to cool.
