Steps: |
| -Heat a large Dutch oven or roasting pan to medium-high and add the bacon. |
| -Turn the heat down to medium-low and slowly render the diced bacon. |
| -Once the bacon has started to brown, add the onions and cook until translucent. |
| -Add the apples, juniper berries and caraway seeds; saute for a minute. |
| -Season with a little salt and pepper (finish seasoning after the flavors have melded). |
| -Add the wine, chicken stock, apple cider, sauerkraut and ham hock. |
| -Cover and bake for 3-4 hours at 300 degrees. Or you can place it in the slow cooker for 5-6 hours. |
| -40 minutes before it is finished, add the sausage and remove the cover. |
