Sauerkraut with Bacon and Apples

Place this in a slow cooker on New Year's eve and indulge the next day for good luck!
Ingredients:
4 ounce bacon (slab) - 1/4-inch diced
1 onion - peeled and julienned
2 apples - peeled and large diced
6 juniper Berries - crushed
1 teaspoon(s) caraway seeds
1 cup(s) white wine - (Alsatian preferred)
1 cup(s) - chicken stock (brown)
1/2 cup(s) apple cider
2 pound sauerkraut - (Deli-style) drained and rinsed
1 ham hocks (smoked)
1 pinch salt and pepper
8 ounce kielbasa - (Bratwurst, Knockwurst or other sausage)
Steps:
-Heat a large Dutch oven or roasting pan to medium-high and add the bacon.
-Turn the heat down to medium-low and slowly render the diced bacon.
-Once the bacon has started to brown, add the onions and cook until translucent.
-Add the apples, juniper berries and caraway seeds; saute for a minute.
-Season with a little salt and pepper (finish seasoning after the flavors have melded).
-Add the wine, chicken stock, apple cider, sauerkraut and ham hock.
-Cover and bake for 3-4 hours at 300 degrees. Or you can place it in the slow cooker for 5-6 hours.
-40 minutes before it is finished, add the sausage and remove the cover.
