Turkey stock can be substitued for chicken stock.
Ingredients:
2 tablespoon(s) olive oil
1 onion - diced (Learn How)
3 garlic cloves - minced (Learn How)
2 green chiles - 4 oz, chopped
2 can(s) cannellini beans - drained and rinsed
4 cup(s) - chicken stock (white)
1 tablespoon(s) cumin
1 teaspoon(s) cinnamon (ground)
1 teaspoon(s) chili powder
3 pound turkey breast - cooked and diced
1 bunch of cilantro - leaves finely chopped
1 cup(s) Monterrey jack cheese - shredded
Steps:
-Heat a large pot over medium heat. When the pot is hot, add the oil.
-Saute the onions and garlic slowly until the onions are translucent but not brown.
-Add in the chiles, beans, stock, and seasonings. Stir to incorporate. Cook for 10 minutes to warm.
-Add the turkey and cilantro and cook an additional 10 minutes.
-Serve warm with monterrey jack cheese to garnish.
