Ingredients:
2 grapefruit - sectioned (reserve the juice) (Learn How)
2 avocados - diced (Learn How)
1/4 cup(s) rice wine vinegar
2 teaspoon(s) Dijon mustard
2 teaspoon(s) honey
1/2 cup(s) olive oil
1 lobster (Learn How)
1 pound lettuce (butter)
1/4 cup(s) cilantro leaves - (tarragon, chives or basil)
1 pinch salt and pepper - to taste
Steps:
-Section the grapefruit into a small bowl and set aside.
-Add 1/4 cup of the grapefruit juice to a bowl large enough to accommodate all of the salad ingredients.
-Add the vinegar, dijon and the honey; whisk in the oil to emulsify.
-Add the avocado to the vinaigrette and stir to coat.
-Add the lobster meat and grapefruit, and gently toss to coat with vinaigrette. (Learn How)
-Fold in the lettuce and herbs and season to taste.
