These pickles will keep in the refrigerator for about 1 month.
Ingredients:
3 large cucumbers (English) - sliced 1/8-inch thick
1 red bell pepper - seeded and finely chopped
1 onion - peeled and finely chopped
1 tablespoon(s) kosher salt
2 teaspoon(s) celery seed
1/2 cup(s) white vinegar
1/4 cup(s) sugar (granulated)
Steps:
-Place the cucumbers, peppers and onions in a medium bowl. Sprinkle with salt and celery seed.
-Cover loosely with plastic wrap and set aside for 1 hour.
-In a small saucepan, bring vinegar to a boil then remove immediately from heat.
-Stir in sugar, stirring until dissolved. Allow to cool, then pour over cucumbers (after they have been sitting for 1 hour).
-Mix well; cover and refrigerate for at least 24 hours before serving.
