Ingredients:
3 eggs
1 cup(s) vegetable oil
2 cup(s) sugar (granulated)
2 cup(s) zucchini - grated
2 teaspoon(s) vanilla extract
3 cup(s) flour (all-purpose)
3 teaspoon(s) cinnamon (ground)
1 teaspoon(s) baking soda
1/4 teaspoon(s) baking powder
1 teaspoon(s) salt (iodized)
1/2 cup(s) walnuts - chopped
Steps:
-Preheat oven to 325 degrees.
-Grease and flour two 8 x 4-inch loaf pans.
-In a large bowl, beat eggs until light and frothy. Mix in oil and sugar.
-Stir in zucchini and vanilla.
-Combine flour, cinnamon, soda, baking powder, salt and nuts; stir into the egg mixture.
-Divide batter into prepared pans.
-Bake for 60 to 70 minutes.
-Cool 10 minutes. Turn out onto a wire rack and cool before serving.
