Steps: |
| -Preheat oven to 400 degrees. |
| -Bring the cauliflower florets and 2 quarts of cold water up to a boil in a pot. |
| -Once it boils, turn it down to a simmer and cook until the cauliflower is soft. (Be careful not to overcook the cauliflower) |
| -Drain the cauliflower and lay it out on a sheet pan. Roast the cauliflower to dry on 400 degrees for about 15 minutes. |
| -You want the edges of the cauliflower to get a little brown. |
| -Once the cauliflower is roasted, place 1/2 of it in a large bowl and mash it with a fork. |
| -Add the other half and fold in the remaining ingredients, except for the oil. |
| -Meanwhile, heat up your oil in a deep saute pan. (If you have a thermometer, 375 degrees) |
| -You can either deep fry or saute depending on preference. |
| -Form the fritters into balls or 2-inch rounds. |
| -Cook until golden on the outside. |
