Ingredients:
1 head cauliflower - finely chopped
1/2 teaspoon(s) baking powder
1/4 teaspoon(s) cumin - ground
1 tablespoon(s) cilantro - washed, dried and finely chopped
1/4 teaspoon(s) red chile flakes - ground
1 pinch nutmeg (whole) - on the microplane
3 eggs - lightly beaten
1 1/2 tablespoon(s) flour
2 tablespoon(s) bread crumbs - or panko
1 teaspoon(s) kosher salt
2 cup(s) vegetable oil - amount may vary
Steps:
-Preheat oven to 400 degrees.
-Bring the cauliflower florets and 2 quarts of cold water up to a boil in a pot.
-Once it boils, turn it down to a simmer and cook until the cauliflower is soft. (Be careful not to overcook the cauliflower)
-Drain the cauliflower and lay it out on a sheet pan. Roast the cauliflower to dry on 400 degrees for about 15 minutes.
-You want the edges of the cauliflower to get a little brown.
-Once the cauliflower is roasted, place 1/2 of it in a large bowl and mash it with a fork.
-Add the other half and fold in the remaining ingredients, except for the oil.
-Meanwhile, heat up your oil in a deep saute pan. (If you have a thermometer, 375 degrees)
-You can either deep fry or saute depending on preference.
-Form the fritters into balls or 2-inch rounds.
-Cook until golden on the outside.
