Ingredients:
2 cup(s) potatoes - peeled and grated
1/4 cup(s) green onions - minced
2 eggs - lightly beaten
2 tablespoon(s) flour (all-purpose)
1 teaspoon(s) salt (iodized)
1/2 cup(s) peanut oil - divided
Steps:
-Place the potatoes in a cheesecloth and wring, extracting as much moisture as possible.
-Transfer potatoes to an medium bowl, and mix with the onion, eggs, flour and salt.
-Heat oil, 1/4 cup at a time, in a non-stick saute pan over medium-high heat until hot but not smoking.
-Cooking 4 latkes at a time, spoon 2 tablespoons of potato mixture per latke. Spread into 3-inch rounds with a fork.
-Reduce heat to moderate, and cook until browned on one side, turn and brown on the other.
-Let drain on paper towels. Repeat process. Serve hot.
Serve with apple sauce or sour cream.
