Steps: |
| -Place the potatoes in a cheesecloth and wring, extracting as much moisture as possible. |
| -Transfer potatoes to an medium bowl, and mix with the onion, eggs, flour and salt. |
| -Heat oil, 1/4 cup at a time, in a non-stick saute pan over medium-high heat until hot but not smoking. |
| -Cooking 4 latkes at a time, spoon 2 tablespoons of potato mixture per latke. Spread into 3-inch rounds with a fork. |
| -Reduce heat to moderate, and cook until browned on one side, turn and brown on the other. |
| -Let drain on paper towels. Repeat process. Serve hot. |
Serve with apple sauce or sour cream. |
