Steps: |
| -Preheat the oven to 400 degrees. |
| -Place the water, butter, sugar and salt in a heavy-bottomed pot. Stirring constantly, bring the mixture to a boil. |
| -Once the butter is completely melted, add the flour and baking powder. Stir to incorporate. |
| -Remove the pot from the heat and scrape the dough into a mixing bowl. |
| -Beat the dough with a mixer for 2 minutes. Incorporate the eggs one at a time. |
| -Continue beating until the dough is smooth and glossy. Transfer to a pastry bag fitted with a large tip. |
| -Pipe 24 equal-sized mounds onto 2 parchment-lined baking sheets. |
| -Bake at 400 degrees for 10 minutes. Reduce heat to 350 degrees and bake an additional 25 minutes. |
| -When the outsides are golden and firm, remove from oven and allow to cool on a rack before serving. |
