This pastry is wonderful when filled with ice cream and drizzled with chocolate sauce. The recipe can also be used for savory recipes such as Gougeres.
Ingredients:
1 cup(s) water
1/2 cup(s) butter (unsalted)
1 teaspoon(s) sugar
1 pinch salt (iodized)
1 cup(s) flour (all-purpose)
1 teaspoon(s) baking powder
3 large eggs
Steps:
-Preheat the oven to 400 degrees.
-Place the water, butter, sugar and salt in a heavy-bottomed pot. Stirring constantly, bring the mixture to a boil.
-Once the butter is completely melted, add the flour and baking powder. Stir to incorporate.
-Remove the pot from the heat and scrape the dough into a mixing bowl.
-Beat the dough with a mixer for 2 minutes. Incorporate the eggs one at a time.
-Continue beating until the dough is smooth and glossy. Transfer to a pastry bag fitted with a large tip.
-Pipe 24 equal-sized mounds onto 2 parchment-lined baking sheets.
-Bake at 400 degrees for 10 minutes. Reduce heat to 350 degrees and bake an additional 25 minutes.
-When the outsides are golden and firm, remove from oven and allow to cool on a rack before serving.
