Ingredients:
2 package cream cheese - 8 oz.-each, softened
1/2 cup(s) sugar (granulated)
1 teaspoon(s) vanilla extract
2 eggs
1 recipe graham cracker crust
2 medium Granny Smith apples - peeled, cored and cut into thin wedges
1 tablespoon(s) water
2 tablespoon(s) sugar (granulated)
1/4 teaspoon(s) cinnamon (ground)
1/2 cup(s) flour (all-purpose)
1/4 cup(s) sugar (brown)
1/4 teaspoon(s) cinnamon (ground)
3 tablespoon(s) butter (unsalted) - cold, cut into pieces
Steps:
-Preheat the oven to 350 degrees.
-Beat cream cheese, 1/2 cup sugar and vanilla in large bowl with electric mixer, on medium speed, until well blended.
-Add eggs; mix just until blended. Pour into crust.
-For the apple topping, mix apples and water in medium saucepan over medium heat; cook 4 minutes or until apples are tender, stirring frequently.
-Add 2 tablespoons sugar and the 1/2 teaspoon cinnamon; mix lightly.
-For the streusel, mix the remaining flour, sugar and cinnamon in a deep bowl.
-With a pastry blender, cut the butter through the mixture until it becomes coarse and granular.
-Carefully spoon apples onto the pie. Cover apples with streusel topping.
-Bake at 350 degrees for 50 minutes until pie is set and streusel is bubbly. Allow to cool 3 hours or overnight.
