Steps: |
| -Preheat the oven to 375 degrees. Combine the sugar and salt. |
| -Sprinkle 1 Cup of the sugar on a work surface and cover it with one square puff pastry sheet. (If you are using frozen, make sure it has thawed) (Learn How) |
| -Sprinkle 1/2 Cup of sugar over the sheet and roll it into a 12-inch square. |
| -Fold in two opposite sides of the pastry sheet square so that they the sides meet in the center. |
| -Fold in the sides over again, meeting in the middle. |
| -Fold one half over the other, just like closing a book. |
| -Cut pastry crosswise into 1/2-inch thick slices. |
| -Dip cut sides of each piece in sugar and arrange, cut-side up, on a parchment-lined baking sheet. |
| -Repeat with the remaining pastry sheet. |
| -Bake palmiers in batches in middle of oven. Cook on one side until golden. Turn the pastries over and cook on the other side until golden. |
| -Cool on a baking rack. |
