Ingredients:
1/2 cup(s) butter (unsalted) - softened
2/3 cup(s) sugar (granulated)
2 eggs
2 cup(s) flour (all-purpose)
2 teaspoon(s) baking powder
1/2 teaspoon(s) salt (iodized)
2/3 cup(s) milk (whole)
1 cup(s) blueberries - rinsed
1/4 cup(s) lemon juice - fresh
1 teaspoon(s) lemon zest
1/2 cup(s) sugar (powdered)
3 tablespoon(s) sugar (granulated)
Steps:
-Preheat oven to 375 degrees and butter a 9 x 9-inch baking pan.
-In a large bowl, cream the butter and 2/3 cup sugar together.
-Mix in the eggs.
-In a medium bowl, mix the flour, baking powder and salt.
-Alternate adding flour mixture and milk until combined. Fold in the blueberries.
-Pour the mixture into the prepared baking pan.
-Bake on 375 degrees for 40 minutes.
-While the cake is baking, mix the lemon juice, zest and powdered sugar.
-Remove the cake from the oven and pour lemon mixture over. Sprinkle with remaining 3 tablespoons of sugar.
-Place under the broiler until the sugar bubbles.
