Steps: |
| -Preheat the oven to 325 degrees, and butter a 9 x 13-inch pan. |
| -Toast the nuts at 325 for 5 minutes, chop and toss with cinnamon and set aside. |
| -Unroll the phyllo dough, cut the stack in half to fit the pan, and cover with a damp cloth to keep the dough from drying out while you work. |
| -Place 2 sheets of the dough in the pan, and brush lightly with melted butter; repeat 4 more times. |
| -Layer a portion of toasted nuts, phyllo, butter. Repeat until all nuts are used. The top should be at least 6 layers. |
| -Cut into triangles with a very sharp knife. Bake at 325 degrees about 50 minutes until golden. |
| -While baklava is baking, prepare the sauce. Boil together water and sugar. Once sugar is dissolved, add vanilla and honey and simmer for 20 minutes. |
| -Once baklava is out of the oven, generously spoon sauce over. Allow to cool before serving. |
