Ingredients:
4 ounce salt pork - left whole and scored
2 ounce bacon - finely chopped
1 onion - minced
1 pound navy beans - picked over and rinsed
9 cup(s) water
1/2 cup(s) molasses - light
4 1/2 teaspoon(s) mustard (brown)
1 teaspoon(s) cider vinegar
1 pinch salt and pepper - to taste
Steps:
-Preheat the oven to 300 degrees.
-Place the salt pork and bacon in a dutch oven on the stove over medium heat. Cook until it begins to crisp, about 5 minutes.
-Stir in onion and continue to cook until translucent, about 5 minutes.
-Stir in the beans, water, molasses and water. Bring to a boil; stir occasionally. Cover and transfer to the bottom rack of the oven.
-Bake, stirring every hour, until the beans are tender, about 4 hours.
-Remove the cover and continue to bake until the liquid has thickened. Stir in the vinegar.
-You can add more molasses or salt and pepper to taste.
