Steps: |
| -Boil potatoes until tender, about 10 minutes; drain. Place in a large bowl and slightly cool. |
| -Meanwhile, in a saute pan over medium heat, cook bacon until crispy, 3 to 5 minutes. |
| -Add onion. Cook, stirring often, until tender, 2 to 4 minutes. |
| -Remove from heat; add 1/4 cup vinegar and the mustard. |
| -Add the bacon mixture to the warm potatoes, and gently toss. |
| -Season with salt and pepper, and add the remaining vinegar as desired. Serve warm. |
