Ingredients:
3 pound potatoes (red creamers) - scrubbed and cut into 3/4-inch pieces
6 slices bacon - thinly sliced crosswise
1 medium red onion - peeled, halved and thinly sliced
1/2 cup(s) white wine vinegar - divided
1/3 cup(s) mustard (whole grain) - German-style
1 pinch salt and pepper - to taste
Steps:
-Boil potatoes until tender, about 10 minutes; drain. Place in a large bowl and slightly cool.
-Meanwhile, in a saute pan over medium heat, cook bacon until crispy, 3 to 5 minutes.
-Add onion. Cook, stirring often, until tender, 2 to 4 minutes.
-Remove from heat; add 1/4 cup vinegar and the mustard.
-Add the bacon mixture to the warm potatoes, and gently toss.
-Season with salt and pepper, and add the remaining vinegar as desired. Serve warm.
