Steps: |
| -Preheat oven to 350 degrees. |
| -Trim the very top part of the garlic off, exposing all of the cloves. |
| -Place the garlic in an 11 x 7-inch baking pan. |
| -Drizzle the garlic evenly with the olive oil and season with salt and pepper. Cover with parchment and foil (garlic will eat through the foil). |
| -Place in a 350 degrees oven for approximately 45 minutes until the cloves lift out of the head easily and are soft. |
| -Let the garlic cool enough to handle. Squeeze the cloves out over a tamis or fine mesh sieve that is on top of a bowl. |
| -Push the garlic through the screen with a wooden spoon. |
| -Store the garlic in a jar with a thin film of the roasting oil on top. |
| -Strain off the remaining oil and save for cooking, vinaigrettes, etc. |
