1 cucumber (English) - peeled and grated (3/4 cup)
2 cup(s) Greek yogurt - plain (16 oz. container)
2 teaspoon(s) lemon juice
1 tablespoon(s) mint Leaves - chiffonade
2 garlic cloves - peeled and minced (Learn How)
1 pinch salt and pepper - to taste
1/2 teaspoon(s) red chile flakes - ground
Steps:
-Place the grated cucumber in a mesh strainer, over a small bowl, to get rid of the excess liquid. Discard liquid.
-If you are not using Greek yogurt you will need to strain the yogurt also. A cheesecloth lined colander is perfect for this.
-Combine all of the ingredients and season to taste.
