Ingredients: | | 1 cucumber (English) - peeled and grated (3/4 cup) | | 2 cup(s) Greek yogurt - plain (16 oz. container) | | 2 teaspoon(s) lemon juice | | 1 tablespoon(s) mint Leaves - chiffonade | | 2 garlic cloves - peeled and minced (Learn How) | | 1 pinch salt and pepper - to taste | | 1/2 teaspoon(s) red chile flakes - ground | |
Steps: | | -Place the grated cucumber in a mesh strainer, over a small bowl, to get rid of the excess liquid. Discard liquid. | | -If you are not using Greek yogurt you will need to strain the yogurt also. A cheesecloth lined colander is perfect for this. | | -Combine all of the ingredients and season to taste. |
