Steps: |
| -Heat the oven to 375 degrees. |
| -Continue cleaning the artichoke for slicing. (Learn How) |
| -Slice the the tomatoes and artichokes as thin as possible. They should be the same thickness. |
| -Spoon the caramelized onions into a 9 x 13-inch baking dish in an even layer. |
| -Arrange the tomatoes and artichokes in a tightly overlapping pattern over the onions. |
| -Drizzle the gratin with 3 tablespoons of oil, add salt and pepper, cover with aluminum foil and bake for 30 minutes. |
| -Reduce the oven temperature to 350 degrees, uncover the gratin and add the thyme leaves. |
| -Mix together the olives, anchovies, parsley and spoon the mixture evenly over the gratin. |
| -Return it to the oven for 10 minutes just to heat through. |
