3 large garlic cloves - peeled and minced

1 tablespoon(s) red wine vinegar
1 pinch salt (sea salt) - to taste
3 tablespoon(s) extra virgin olive oil
1 pinch black pepper - to taste
1 pound baby beets
1 tablespoon(s) herbs - fresh snipped parsley, tarragon, chervil & chives
Steps:
-Whisk together the garlic, dijon, and red wine vinegar. Whisk in the olive oil to make a vinaigrette.
-Peel the beets and finely grate them.
-Transfer beets to the dressing bowl, toss well to coat and toss with fresh herbs.
