2 pound potatoes (yukon gold) - small potatoes scrubbed
Steps:
-Preheat the oven to 375 degrees.
-Sprinkle about 2 teaspoons of salt in a dutch oven, place the potatoes in the pot and sprinkle with the remaining salt.
-Cover and place dutch oven in the oven and roast, cook until tender, about 45 minutes.
