Use this sauce for poultry, pork, fish or even ice cream. | Ingredients: | | 1 cup(s) sugar | | 1 cup(s) water | | 1 teaspoon(s) lemon juice - fresh | | 1 cup(s) Sherry vinegar | | 1 teaspoon(s) Dijon mustard | | 2 tablespoon(s) butter | |
Steps: | | -Slowly caramelize the sugar, water and lemon juice in a small saucepan over low heat. | | -Once the sugar caramelizes to a deep amber color, very carefully add the vinegar. It will pop and harden at first. | | -Continue cooking on low heat and swirl the mixture until it liquifies again. Whisk in the Dijon and butter to create a smooth sauce. | | -Add the figs and cook an additional 3 minutes. |
