Use this sauce for poultry, pork, fish or even ice cream.
Ingredients:
1 cup(s) sugar
1 cup(s) water
1 teaspoon(s) lemon juice - fresh
1 cup(s) Sherry vinegar
1 teaspoon(s) Dijon mustard
2 tablespoon(s) butter
Steps:
-Slowly caramelize the sugar, water and lemon juice in a small saucepan over low heat.
-Once the sugar caramelizes to a deep amber color, very carefully add the vinegar. It will pop and harden at first.
-Continue cooking on low heat and swirl the mixture until it liquifies again. Whisk in the Dijon and butter to create a smooth sauce.
-Add the figs and cook an additional 3 minutes.
