You can spice this basic dish up by adding sauteed spinach and mushrooms to the cheese or adding browned ground beef and Italian sausage to the sauce.
Ingredients:
12 lasagna noodles - cooked according to package, and drained
1 pound Ricotta cheese
1 egg - lightly beaten
1/4 cup(s) basil leaves - chopped
1/4 cup(s) Italian parsley - chopped
1 1/2 cup(s) Parmesan cheese - grated, divided
1 pinch salt and pepper - to taste
7 cup(s) - pasta sauce
4 cup(s) mozzarella cheese - grated
Steps:
-Place an oven rack in the middle position and preheat the oven to 375.
-In a medium bowl, mix the Ricotta, egg, basil, parsley and 1 cup of Parmesan together; season with salt and pepper.
-Spread 1 cup of sauce over the bottom of a 13 x 9-inch pan, and top with 3 lasagna noodles (placed side-by-side).
-Spread 1/3 of the Ricotta mixture over the noodle layer. Top evenly with 1 cup of Mozzarella.
-Spoon 1 1/2 cups of sauce evenly over cheese layer. Repeat twice layering noodles, Ricotta mixture, Mozzarella and sauce.
-Top the dish with last 3 lasagna noodles. Spread 1 1/2 cups of sauce over this layer.
-Sprinkle evenly with remaining Mozzarella and Parmesan.
-Cover lasagna with a sheet of parchment, then foil. Bake for 15 minutes.
-Remove foil and bake for 25 minutes more until cheese is browned.
-Remove from oven and allow to cool for 15 minutes before serving.
