12 tomatoes
3 quart water
1 pinch kosher salt
Steps:

-Cut a shallow X into the skin of the other end.
-Meanwhile bring a pot of salted water to a rapid simmer.
-Prepare an ice water bath in a medium bowl.
-Three at a time, carefully drop the tomatoes into the water. Cook just until the skin just cracks at the X.
-Remove with a slotted spoon. Place in the water bath to immediately stop the tomatoes from cooking.
-Once cool, the skin can easily be peeled away.
-The tomatoes can be cut into quarters and seeded.
-Depending on use, the tomatoes can be left whole, cut into strips or diced.
