Steps: |
| -With a paring knife, remove the stem of the tomatoes. (Learn How) |
| -Cut a shallow X into the skin of the other end. |
| -Meanwhile bring a pot of salted water to a rapid simmer. |
| -Prepare an ice water bath in a medium bowl. |
| -Three at a time, carefully drop the tomatoes into the water. Cook just until the skin just cracks at the X. |
| -Remove with a slotted spoon. Place in the water bath to immediately stop the tomatoes from cooking. |
| -Once cool, the skin can easily be peeled away. |
| -The tomatoes can be cut into quarters and seeded. |
| -Depending on use, the tomatoes can be left whole, cut into strips or diced. |
