Ingredients:
2 pound asparagus - trimmed
2 tablespoon(s) extra virgin olive oil
1/2 teaspoon(s) kosher salt
2 garlic cloves - peeled and slivered (Learn How)
1 teaspoon(s) lemon zest
2 tablespoon(s) lemon juice
1/2 teaspoon(s) Dijon mustard
1/4 teaspoon(s) black pepper
1 tablespoon(s) parsley (fresh) - chopped
Steps:
-Preheat oven to 400 degrees.
-After trimming the asparagus, toss it with the olive oil, salt and garlic slivers.
-Roast on 400 degrees for 5-8 minutes until tender.
-Meanwhile, whisk the remaining ingredients together.
-Toss the roasted asparagus with the Dijon sauce while it is warm, and serve.
