This vinaigrette utilizes a gastrique (caramelized sugar and vinegar) as a base. | Ingredients: | | 2 tablespoon(s) sugar | | 1/4 cup(s) water | | 1 teaspoon(s) lemon juice | | 1/4 cup(s) rice wine vinegar | | 1 shallot - peeled and minced (Learn How) | | 1 apple - cored and chopped | | 1 teaspoon(s) mustard seeds (yellow) | | 3/4 cup(s) olive oil blend | | 1 pinch salt and pepper - to taste | |
Steps: | | -In a small saucepan, slowly heat the sugar, water and lemon juice over medium-low heat. Keep cooking until a light caramel color is achieved. | | -Once it is caramelized, carefully add the vinegar. It will harden and then return to liquid while mixing over low heat. | | -Add the shallots, apples and mustard seeds. Turn off the heat and let it cool down before blending. | | -Place the mixture into a blender (once cooled) and turn on. Slowly drizzle in the oil to emulsify. | | -Season to taste. |
