Ingredients:
1 tablespoon(s) olive oil
4 garlic cloves - chopped
1 can(s) whole tomatoes - 28 oz.
2 chipotles in adobo - finely chopped
1 tablespoon(s) adobo
1 cup(s) - chicken stock (white)
1 small - roasted chicken
1/2 cup(s) cilantro leaves - lightly packed
4 cup(s) tortilla chips
1/4 cup(s) sour cream
1/4 cup(s) Feta cheese - crumbled
Steps:
-In medium saucepan, over medium heat, cook garlic with the oil for 1-2 minutes or until garlic is fragrant.
-Add the tomatoes with their pure?, chiptotles, adobo sauce and stock. Bring to a boil.
-Reduce the heat and simmer rapidly until lightly thickened, 6-8 minutes.
-Add the chicken and cook until hot, stirring frequently.
-Remove from heat and stir in the chopped cilantro.
-Divide the chips into four bowls, top with chicken mixture and sauce.
-Top with sour cream and crumbled feta.
