Ingredients:
3 cup(s) blackberries
3/4 cup(s) sugar
3 tablespoon(s) flour (all-purpose)
1 1/2 cup(s) water
1 tablespoon(s) lemon juice
1 3/4 cup(s) flour (all-purpose)
2 teaspoon(s) baking powder
3/4 teaspoon(s) salt (iodized)
2 1/2 tablespoon(s) sugar
1/4 cup(s) shortening
1/4 cup(s) heavy cream
1/4 cup(s) buttermilk
2 tablespoon(s) butter - melted
Steps:
-Preheat oven to 425 degrees.
-Place berries in a lightly buttered 9 x 9-inch pan.
-In a medium bowl, mix first additions of sugar, flour, water and lemon juice. Pour over berries.
-Bake at 425 degrees for 15 minutes.
-Meanwhile, in a large bowl, mix second addition of flour, baking powder, salt and sugar. Cut in shortening until mixture resembles coarse meal.
-Add the cream and buttermilk to flour mixture and lightly knead (4-5 times).
-Roll dough onto lightly floured surface and cut to fit on baking dish.
-Place crust on hot berries and brush with butter.
-Bake on 425 degrees for 25-30 minutes or until crust is golden brown.
