Steps: |
| -In a small saucepan, combine sugar, cornstarch and salt. |
| -Gradually stir in milk. |
| -Cook over medium heat, stirring constantly, until mixture comes to a simmer. |
| -Cook for 1 minute while simmering, stirring constantly. Remove from heat. |
| -In a medium bowl, beat egg yolks until thick a brighter yellow. |
| -Slowly stir in 1/4 of the milk mixture into the eggs. |
| -Now add the contents of the bowl to the remaining milk mixture in the pan, stirring constantly. |
| -Bring to a simmer over medium heat and cook until the pudding begins to thicken. |
| -Remove from heat, and stir in the butter and vanilla. |
| -Pour mixture into four 6-oz. cups, cover will plastic wrap and refrigerate. |
