Here is an easy cake to make for Valentines Day! Top it with some strawberries tossed with a little sugar and anglaise sauce.
Ingredients:
12 egg whites - room temperature
1 1/2 teaspoon(s) cream of tartar
1/4 teaspoon(s) salt (iodized)
1 1/2 cup(s) sugar (granulated) - divided
1 cup(s) cake flour
1 1/2 teaspoon(s) vanilla extract
Steps:
-Preheat oven to 375 degrees.
-With a mixer, beat egg whites until foamy.
-Add cream of tartar and salt, and beat until soft peaks form.
-Add sugar, 2 tablespoons at a time, beating until stiff peaks form.
-Sprinkle the flour onto the beaten egg whites. With a rubber spatula, fold flour gently into the egg whites. Fold in the vanilla.
-Pour mixture into an ungreased 10-inch tube pan.
-Bake at 375 degrees for 30-35 minutes or until cake springs back when lightly touched.
-Invert pan and let cool for 40 minutes.
-Loosen cake by using a thin knife around sides and remove.
