Ingredients:
1 cup(s) cornmeal
3/4 cup(s) flour
3 teaspoon(s) baking powder
1 teaspoon(s) kosher salt
3/4 cup(s) milk (whole)
2 eggs - well-beaten
3 tablespoon(s) honey
1/4 cup(s) butter (unsalted) - melted
Steps:
-Preheat the oven to 425 degrees and grease a 8-inch iron skillet or baking dish.
-In a large bowl, mix cornmeal, flour, baking powder and salt.
-Whisk the buttermilk, eggs and honey together in a separate bowl.
-Whisk the melted butter into the wet ingredients.
-Add the wet ingredients to the dry and stir to just combine. Pour into the greased pan.
-Bake for 15-20 minutes, until a toothpick comes out clean.
-Cool on a wire rack.
