Ingredients:
2 shallots - peeled and minced (Learn How)
1 tablespoon(s) - roasted garlic

1 tablespoon(s) cornichons - roughly chopped
1 tablespoon(s) Dijon mustard
1 egg yolk
1 egg
1 tablespoon(s) red wine vinegar
1 tablespoon(s) lemon juice - fresh
3/4 cup(s) olive oil
2 avocados - diced (Learn How)
1 pinch salt and pepper - to taste
1 pinch red chile flakes - ground
Steps:
-Place all of the ingredients, except for the oil, avocado and seasoning, into the food processor.
-Turn on the processor and blend to a smooth paste. Slowly drizzle in the olive oil to emulsify.
-Once emulsified, add the avocado and blend until smooth.
-Season to taste.
