Ingredients:
2 cup(s) flour (all-purpose) - divided
1 tablespoon(s) baking powder
1/2 teaspoon(s) salt (iodized)
1/2 cup(s) sugar
1 egg - slightly beaten
1 cup(s) milk (whole)
1/4 cup(s) butter - melted
1 cup(s) blueberries - fresh or frozen
Steps:
-Preheat the oven to 375 degrees and butter a muffin pan.
-Mix 1 3/4 cups flour, baking powder, salt and sugar in a large bowl.
-Add the egg, milk and melted butter, stirring enough only to dampen the flour. The batter will appear lumpy.
-Sprinkle the remaining 1/4 cup of flour into the blueberries and stir that mixture into the batter.
-Spoon the batter into a prepared muffin tin until each cup is two-thirds full.
-Bake for 20-25 minutes.
