Steps: |
| -Preheat the oven to 375 degrees and butter a muffin pan. |
| -Mix 1 3/4 cups flour, baking powder, salt and sugar in a large bowl. |
| -Add the egg, milk and melted butter, stirring enough only to dampen the flour. The batter will appear lumpy. |
| -Sprinkle the remaining 1/4 cup of flour into the blueberries and stir that mixture into the batter. |
| -Spoon the batter into a prepared muffin tin until each cup is two-thirds full. |
| -Bake for 20-25 minutes. |
