Ingredients:
1/2 cup(s) cabbage (red) - julienned
1/4 cup(s) carrots - peeled and julienned (Learn How)
1/4 cup(s) radishes - julienned
2 tablespoon(s) scallions - green part, minced
1/4 cup(s) mayonnaise
1 teaspoon(s) lemon juice
1 teaspoon(s) red wine vinegar
1 pinch salt and pepper
8 slices bread (12-grain)
8 ounce Cheddar cheese (aged white) - 2 oz. per sandwich
8 ounce swiss cheese - 2 oz. per sandwich
1 cucumbers (English) - peeled and sliced 1/4-inch thick
1 alfalfa sprouts
2 tomatoes - sliced
1 onion (red) - peeled and sliced
Steps:
-To make the slaw: Mix the cabbage, carrots, radishes and scallions in a bowl.
-Add the mayonnaise, lemon juice and vinegar; mix well. Season to taste.
-Now start assembling the sandwiches.
-Layer the remaining ingredients and the slaw in the middle on the sliced bread.
