Top this hummus with ecalivada and crumbled goat cheese.
Ingredients:
2 black eyed peas - (14 oz. each) drained and rinsed
1 tablespoon(s) tahini
1 tablespoon(s) - roasted garlic
1 tablespoon(s) lemon juice
1/2 teaspoon(s) red chile flakes - ground
1 pinch salt and pepper
3 tablespoon(s) olive oil
Steps:
-Be sure to rinse and drain the peas well. Place the peas into a food processor.
-Add the tahini, garlic, lemon juice and seasoning.
-Turn the processor on and let all of the ingredients come together into a paste.
-Slowly drizzle in the olive oil through the chute in the lid.
-Check the seasoning and serve warm or cold.
