Ingredients:
2 tablespoon(s) olive oil
1 cup(s) corn
6 scallions - small diced
1 red bell pepper - seeded and brunoise (Learn How)
1 tomato - small diced
1 avocado - small diced (Learn How)
1 tablespoon(s) lime juice - fresh
8 ounce crabmeat - picked over for bits of shell
1 pinch salt and pepper - to taste
1 cup(s) jack cheese - grated
6 flour tortillas
2 tablespoon(s) butter
Steps:
-Heat a saute pan to medium and add oil.
-Once the oil is hot, add the corn and saute until soft. Add the scallions and bell pepper. Saute an additional minute.
-Add the tomato and remove the pan from the heat.
-Dice the avocado, place in a bowl and toss it with the lime juice.
-Gently fold in the crab meat into the avocado and season.
-Divide the sauteed vegetables between the tortillas (only fill half). Then divide the cheese between them.
-Top the cheese with the crab and avocado mixture.
-Fold the tortillas over to form half moons.
-Heat a 12-inch saute pan on medium-high. Add a small amount of butter.
-As the butter melts, add a quesadilla, pressing down slightly with a spatula. Saute on both sides until heated all of the way through.
