Ingredients:
3 cup(s) zucchini - diagonal slices cut 1/8-inch thick
1 red bell pepper - seeded and cut into 4 pieces
1 medium onion (red) - peeled and sliced crosswise about 1/4-inch thick
2 tablespoon(s) balsamic vinegar
1 teaspoon(s) extra virgin olive oil
1 pinch salt and pepper - to taste
1 ciabatta bread - loaf, cut in half horizonatally
1 cup(s) mixed greens
4 ounce swiss cheese - sliced
8 basil leaves
Steps:
-Prepare grill to medium-high heat.
-Place first 6 ingredients in a large bowl. Toss gently to coat, remove vegetables and reserve liquid.
-Grill the bell pepper and onions for 7 minutes on each side or until tender.
-Grill the zucchini for 3 minutes on each side.
-Hollow out the bottom half of the ciabatta, leaving a 1/2-inch thick shell.
-Layer grilled vegetables, greens, cheese, and basil in bottom loaf.
-Drizzle the reserved liquid on top, cover with top half of bread.
-Lightly press together.
-Carefully place the full loaf on grill rack, grill 4 minutes on each side or until cheese melts.
-Cut into 4 pieces.
