This recipe is rich in Omega-3 ingredients.
Ingredients:
3/4 cup(s) olive oil
1/2 cup(s) maple syrup (pure)
1/2 cup(s) honey
5 cup(s) rolled oats
1 cup(s) almonds - sliced
1 cup(s) walnuts - halves or pieces
1/4 cup(s) flax seeds (whole) - ground in a coffee bean grinder
1/2 cup(s) wheat germ
1/2 cup(s) sunflower seeds - not roasted
3/4 cup(s) pumpkin seeds - not roasted
1 cup(s) coconut flakes (unsweetened)
2 cup(s) apricots (dried) - quartered
1 cup(s) raisins (golden)
Steps:
-Preheat the oven to 275 degrees.
-Mix all of the ingredients together in a large bowl except for the coconut, apricots and raisins.
-Divide the granola mixture between two 1-inch sheet pans.
-Bake the granola for 45 minutes, stirring every 10 minutes.
-Then stir in the coconut, apricots and raisins. Bake for an additional 15 minutes. Make sure the coconut does not burn.
-To cool, line a sheet pan with parchment paper. Empty the granola out onto the parchment.
-After cooling, this can be kept out in a container for 2 weeks or frozen for 2 months.
