Ingredients:
1 pound chicken breast (boneless skinless) (Learn How)
1/4 pound bacon
1 shallot - peeled and minced (Learn How)
1 tablespoon(s) red wine vinegar
1/2 cup(s) mayonnaise
1/2 cup(s) yogurt
1/4 cup(s) blue cheese
1/4 cup(s) scallions - chopped
1 pinch salt and pepper - to taste
Steps:
-Roast or poach the chicken breasts (or use leftovers or rotisserie chicken). Small dice the breast and place in a large bowl.
-Cook the bacon in a saute pan until crispy and set aside to drain, then crumble.
-In a small bowl, mix together the shallot and red wine vinegar.
-Whisk in the mayonnaise and yogurt.
-Add the dressing to the chicken and toss to coat.
-Toss in the cheese, scallions and crumbled bacon.
-Season to taste.
