Ingredients:
1 eggplant - peeled and 1/4-inch diced (Learn How)
1 pinch kosher salt
2 tablespoon(s) olive oil
4 eggs
1 1/2 cup(s) heavy cream
1 pinch salt and pepper - to taste
1 recipe - pate Brisee - parbaked
1/4 cup(s) basil - torn
2 tomatoes - 1/4-inch diced
1/4 cup(s) Parmesan cheese (grated)
1/3 cup(s) mozzarella cheese (smoked) - grated
Steps:
-Preheat oven to 400 degrees.
-Arrange eggplant on paper towels, sprinkle with salt and let stand for 15 minutes.
-Pat dry with paper towels, place on a baking sheet and brush liberally with the oil.
-Bake at 400 degrees for 20 minutes until golden. Meanwhile, whisk the eggs and cream together, and season.
-In the crust, alternate layers of the remaining ingredients. For the top layer, use twice as much cheese.
-Pour the custard over the layers.
-Bake at 400 degrees for approximately 30 minutes or until the custard is set.
