Steps: |
| -Preheat oven to 400 degrees. |
| -Arrange eggplant on paper towels, sprinkle with salt and let stand for 15 minutes. |
| -Pat dry with paper towels, place on a baking sheet and brush liberally with the oil. |
| -Bake at 400 degrees for 20 minutes until golden. Meanwhile, whisk the eggs and cream together, and season. |
| -In the crust, alternate layers of the remaining ingredients. For the top layer, use twice as much cheese. |
| -Pour the custard over the layers. |
| -Bake at 400 degrees for approximately 30 minutes or until the custard is set. |
