Steps: |
| -Caramelize the sugar in a dry pan over medium heat. |
| -Pan roast duck to desired temperature. Serve with sauce. |
| -Once it is a nice caramel color, carefully add the orange juice and the lime juice and reduce heat to low. |
| -IT WILL STEAM AND HARDEN! BE CAREFUL! |
| -Add the stock and the chipotles, continue cooking over low heat, without stirring, to allow the mixture to loosen. |
| -Reduce the sauce by 1/3. |
| -Whisk in the butter while the sauce is still hot. |
| -Add salt and pepper to taste. |
