Steps: |
| -Preheat oven to 300 degrees. |
| -Coat a large sheet pan with cooking spray. |
| -Place the oats on the sheet pan(s) in a thin layer and bake at 300 degrees for approximately 15 minutes until lightly golden. Check and stir often. |
| -Meanwhile, heat the butter, honey and sugar in a small saucepan until the sugar dissolves over medium heat. |
| -Stir the cashews, cinnamon and salt into the mixture, and empty into a large bowl. |
| -Add the toasted oats to the mixture and toss together, evenly coating. Return the mixture to the sheet pan(s). |
| -Bake the granola for 30 minutes, stirring every 10 minutes. Then add the figs and cook for another 10 minutes or until golden. |
