Ingredients:
4 cup(s) rolled oats
1/2 cup(s) butter (unsalted)
1/4 cup(s) honey
1/4 cup(s) brown sugar
1 1/2 cup(s) cashews
1 teaspoon(s) cinnamon (ground)
1/2 teaspoon(s) kosher salt
1 1/2 cup(s) figs (dried) - diced
Steps:
-Preheat oven to 300 degrees.
-Coat a large sheet pan with cooking spray.
-Place the oats on the sheet pan(s) in a thin layer and bake at 300 degrees for approximately 15 minutes until lightly golden. Check and stir often.
-Meanwhile, heat the butter, honey and sugar in a small saucepan until the sugar dissolves over medium heat.
-Stir the cashews, cinnamon and salt into the mixture, and empty into a large bowl.
-Add the toasted oats to the mixture and toss together, evenly coating. Return the mixture to the sheet pan(s).
-Bake the granola for 30 minutes, stirring every 10 minutes. Then add the figs and cook for another 10 minutes or until golden.
