Ingredients:
1 tablespoon(s) butter
1 1/2 cup(s) flour (all-purpose)
1/2 cup(s) sugar
2 teaspoon(s) baking powder
1 teaspoon(s) baking soda
1 teaspoon(s) cinnamon (ground)
1/2 teaspoon(s) salt (iodized)
1 cup(s) yogurt - plain
3/4 cup(s) banana - ripe, mashed
2 tablespoon(s) vegetable oil
1 large egg
1 teaspoon(s) vanilla extract
1 tablespoon(s) powdered sugar
Steps:
-Preheat oven to 400 degrees.
-Butter a 9 x 9-inch pan.
-Combine flour, sugar, baking powder, soda, cinnamon and salt in a small bowl.
-Combine yogurt, banana, oil, egg and vanilla in a medium bowl.
-Gently stir dry ingredients into yogurt mixture just until blended. Do not overmix.
-Spread batter into buttered pan.
-Bake on 400 degrees for 20 minutes, or until cake begins to pull from the sides.
-Cool cake for 10 minutes in pan, turn out onto rack and sprinkle lightly with powdered sugar.
