Grilled Pork Chops with Honey Bourbon Glaze

Allow time for marinating.
Ingredients:
1/2 cup(s) honey
1/2 cup(s) bourbon
1/4 cup(s) Dijon mustard
2 tablespoon(s) brown sugar
1/4 cup(s) hoisin sauce
3 tablespoon(s) plum sauce
1 tablespoon(s) soy sauce
2 tablespoon(s) Worcestershire sauce
2 teaspoon(s) Sambal
4 pork chops - (8-10 oz. chops) bone-in or boneless
1 pinch salt and pepper - to taste
Steps:
-Combine all the ingredients, except for the pork, salt and pepper; divide into two batches. Half of the mixture is for marinating the chops.
-Place the chops in a bag or container with half of the marinade and refrigerate for 1-12 hours.
-Remove the chops from the marinade and season with salt and pepper on a wire rack.
-Heat a grill to medium flame. Too high of a flame will cause the chops to burn because of the sugar.
-Grill the chops on one side for 3 minutes and turn over. Start brushing the chops with the reserved glaze on the grilled side.
-Once the chops have grilled 3 minutes on the other side, rotate them 45 degrees and flip (this will make those fancy grill marks).
-Continue glazing and then turn again after 3 minutes.
-This amount of cook time will yield a medium steak (130 degrees). Let the pork chop rest for at least 10 minutes before serving.
